CARROT, GREEN APPLE AND GINGER JUICE

A gently cleansing, agni-supporting juice with a balance of sweet and spice

In Ayurveda, a fresh juice can be a small daily ritual. Something that supports digestion and gently cleanses the system, when it's taken at the right time, in the right season, for your particular constitution.
This is one I come back to often. Carrot, green apple and ginger together bring a natural sweetness, a lightness, and just enough warmth to keep things moving rather than slowing them down. It's refreshing, a little sharp, and genuinely supportive when digestion feels sluggish but not seriously compromised, that heavy, low agni feeling many of us know well.
Carrot brings a grounding sweetness and real nourishment. Green apple adds a light, slightly sour freshness that helps stimulate digestion. Ginger provides the warming kick that keeps the whole thing from becoming too cooling or too heavy on the gut, which raw juices can sometimes be.
Ayurvedic qualities
Taste (Rasa): Sweet, slightly sour, pungent
Energy (Virya): Mildly warming
Effect on digestion: Supports agni, in moderation
For your dosha
Kapha tends to do especially well with this one. It's light and stimulating, and helps reduce heaviness.
Pitta generally finds it supportive too, particularly in warm weather. If you're feeling more heated than usual, go a little lighter on the ginger.
Vata can enjoy this with a bit more care. Best taken at room temperature, with a touch of extra ginger or a pinch of warming spice to help digestion along.
When to drink it
Mid-morning or early afternoon tends to work best, when digestion is naturally stronger. I'd avoid it first thing in the morning if your digestion is sensitive, and it's not the best choice late in the day, since raw juices can be harder on the system as things wind down.
Seasonally, spring and early summer suit this juice particularly well, when the body naturally benefits from a little more lightness and gentle cleansing.
RECIPE
INGREDIENTS
2 large carrots, peeled
2 medium green apples, with skin
2-inch piece fresh ginger, cleaned
1 to 1.5 cups water
PREPARATION
Juice all the ingredients together, adding a little water as you go to help things blend smoothly. If you don't have a juicer, blend the chopped ingredients with the water, then strain through a muslin cloth or a fine strainer.
For a more digestion-friendly version, you can:
Let the juice sit for a few minutes to come to room temperature
Add a pinch of ground cinnamon or cardamom for extra warmth
Ease back on the apple slightly if you'd prefer it less sweet
This juice should be sweet enough, but if you want a touch more sweetness, a small amount of raw honey works well once the juice is no longer cold.
You can adjust the amount of ginger you add depending on how spicy you like it.
Serve cool or at room temperature and enjoy at leisure.
